Oatmeal Lemon Cookies - Recipe

Ingredients:

  • Oatmeal

    3 cups
  • Lemons

  • Butter

    4 sticks

  • Sugar

Cooking Directions:

Preheat the oven at 350F.

Wash the lemon. Grate the zest of half lemon. Squeeze it and collect the juice. Filter with a strainer if necessary.

With the help of a wooden spoon, blend the butter with the sugar until your mixture is smooth and creamy. You can soften a bit the butter in the microwave.

At this point, add the grated zest of 1/2 lemon, the lemon juice , the 2 cups of flour, the baking soda and the oatmeal. Mix until well blended.

Lay one tablespoon of cookie dough on a lightly greased baking sheet. Keep the cookies one inch far away one from each other to avoid them sticking together while cooking.

Bake for about 10 minutes or until ready. Let cool and serve them to accompany your afternoon tea or as a sweet treat for breakfast.


Tips:

You can add to, or substitute, the lemon juice with lemon extract. Just add 1-2 teaspoons of it to the mixture.
