Ingredients:

  • Oatmeal

    3 cups
  • Lemon Zest

    1/2 lemon
  • Unsalted Butter (softened)

    2 sticks
  • Eggs

    2
  • Sugar (1 cup brown and 1 cup regular)

    2 cups
  • All Purpose Flour

    2 cups
  • Lemon Extract

    1 tbsp
  • Baking Soda

    1 tsp
  • Salt

    1/4 tsp

Cooking Directions:

With the help of a spoon, blend the softened butter with the 2 cups of sugar until smooth and creamy.

Add the grated zest of half lemon and the tablespoon of lemon extract.

Combine sifted flour, oatmeal, baking soda and salt. Add slowly to the butter and sugar. Mix until obtaining a well blended cookie dough.

For each cookie, drop a tablespoon of dough on a lightly greased cookie sheet about 2 inches apart.

Bake for about 10 minutes in the pre-heated oven at 350F.

When ready, remove from the oven and let cool before serving.


Tips:

You can add to, or substitute, the lemon extract with lemon juice. Just filter it with a strainer to remove the seeds.
