Ingredients:

  • Pinto Beans

    1 15 oz can
  • Onions

    1/2
  • Garlic

    1 clove
  • Cumin

    1/2 tsp
  • Extra Virgin Olive Oil

    1 tbsp
  • Hot Habanero Peppers (optional)

    1
  • Salt

    to taste
  • Black Pepper

    to taste

Cooking Directions:

Reduce in puree the canned pinto beans with their juices using a food processor or a blender.

Wash and finely chop onions and garlic.

In a large skillet, saute in extra virgin olive oil the garlic and the onion until lightly golden-brown.

At this point, add the cumin powder and, if desired, a whole dried Habanero pepper.

Stir well before adding the pinto beans puree to the caramelized onions and garlic.

Lower the heat and cook, covered, for about 15 minutes to blend the flavors. Stir often to prevent the refried beans from sticking to the pan.

Adjust with salt and pepper as desired. Serve hot as a side dish, together with tortilla chips or as a filling for burritos and quesadillas.
