Mustard and Herbs Chicken Breasts - Recipe

Mustard and Italian herbs create an unusual mix of flavors in this chicken recipe. Perfect as a main dish for your family dinner.

Ingredients:

  • Chicken Breasts

    1-1/2 lb
  • Dijon Mustard

    1 jar
  • Bread Crumbs

    1 cup
  • Unsalted Butter

    1/2 stick
  • Extra Virgin Olive Oil

    4 tbsps
  • Lemon Juice

    2 or 3 tbsps
  • Sage

    2 leaves
  • Rosemary

    1 bunch
  • Italian Parsley (small)

    1 bunch
  • Salt

    to taste
  • Black Pepper

    to taste

Cooking Directions:

Prepare the marinade mixing 4 tablespoons of extra virgin olive oil, salt, pepper and lemon juice.

Cut the chicken breast in strips and add it to the marinade. Let rest for about 30-40 minutes.

In the meantime, finely chop the sage, the rosemary and the italian parsley. Set apart.

When the chicken strips are marinated, cook them in a large pan with some oil until brown on each side. Remove from the heat.

Spread the chicken strips with mustard and then roll them into grated bread to form a crust all around.

Preheat a large pan or skillet. Melt the butter and then add the chicken strips. Cook for about 8-10 minutes or until ready, flipping frequently.

When ready remove from heat and lay the chicken strips on a plate. Spread with the previously chopped herbs and adjust with pepper.
