Before starting, crack the eggs in a small bowl and whisk them lightly with a fork. Season them with salt and pepper and combine with the coconut cream.

Peel, cut in halves and slice the plantains in pieces about 1 inch long.

Wash, clean and slice the onions. Chop the garlic.

Chop the cheese slices in small pieces with a knife.

In a large skillet, heat the vegetable oil. When hot, add the onions and the plantains and slowly stir fry until tender and golden-brown colored. Add at this point the chopped garlic and stir.

Pour the egg and coconut cream mixture into the skillet.

Tilt the skillet to spread the eggs on the whole surface of the pan. Let cook for a while until the eggs start to firm a little.

Keep tilting the pan to spread the remaining liquid around and allow the omelette to cook evenly.
