Ingredients:

  • Rigatoni Pasta

    1 lb
  • Saffron Powder

    1/8 tsp
  • Cooked Ham

    1/4 lb
  • Onions (finely chopped)

    1
  • Ham Bouillon

    1 cube
  • Extra Virgin Olive Oil

    1 tbsp
  • Romaine Lettuce

    1 head
  • Salt

    to taste

Cooking Directions:

In a large pot, bring to boil enough water to cook the Rigatoni Pasta. When water is at rolling boil, adjust with salt and cook the pasta until al dente.

In a large skillet sauté the chopped onions with the extra virgin olive oil.

When the onions are caramelized, add the ham bouillon and the cooked ham in small strips. Heat, stirring frequently, for about 2-3 minutes.

Add the chopped lettuce, mix well and cover. Cook for an additional 5 minutes at low heat. Add some tablespoons of water if necessary.

When the pasta is almost ready, add the saffron powder to the sauce and stir until you obtain a yellowish colored dressing sauce. Adding the saffron powder at the very last moment helps preserving its true flavor.

For the preparation of this easy and tasty pasta sauce we strongly advice the use of saffron powder. Saffron powder, even if more expensive than the more common saffron flowers, will give to your sauce a stronger and more delicious flavor.
