Mozzarella and Mint Pasta - Recipe

Ingredients:

  • Spaghetti Pasta

    1 lb
  • Mint Leaves

    1 bunch
  • Diced Tomato Sauce

    1 26.5 oz can
  • Mozzarella Cheese (fresh, in water)

    1/3 lb
  • Onions (finely chopped)

    1
  • Extra Virgin Olive Oil

    2 tbsps
  • Salt

    to taste

Cooking Directions:

For the pasta: Fill a large stockpot with water. Bring the water to a rolling boil. Salt to taste. Add the Spaghetti. Cook for the suggested time or until the pasta is al dente stirring occasionally. Drain the pasta into a colander.

For the sauce: Heat a large skillet, add the olive oil and the finely chopped onion. Saute until brown.

Add the diced tomato sauce and let cook for 10 minutes.

In the mean time cube the fresh mozzarella cheese. Wash and chop the mint leaves.

Dress the pasta with the tomato sauce and top with mozzarella cheese and mint leaves.


Tips:

Best with Thick or rigati spaghetti pasta.

If you like you may substitute the mozzarella with fresh ricotta or feta cheese.
